Moama Bowling Club Ignites New Era with Launch of Wildergreen and Signature Restaurant Embr
Moama Bowling Club has ushered in a new chapter for the region with the launch of Wildergreen, a vibrant hospitality and lifestyle precinct anchored by the Club’s newest culinary venture, Embr.
The bold wood-fired Italian restaurant officially opened on 20 November and promises a dining experience that blends European craft, Australian flavour, and the Club’s signature commitment to community.
Developed as a hub for connection and good times, the Wildergreen precinct represents a major step forward for Moama Bowling Club’s long-term vision. At its heart sits Embr – a restaurant built around a glowing wood-fired oven, where hand-stretched dough, dancing flames, and smoky aromas set the tone for a shared feast.
Led by Sardinian-born Chef Daniel Girau, Embr showcases a menu rooted in traditional Italian technique but elevated with a distinctly Australian twist. Native ingredients such as Davidson plum, wattleseed, pepperberry, and lemon myrtle infuse brightness and depth, transforming familiar dishes into something entirely new.
“At Embr, fire is at the heart of everything we do,” Chef Girau says.
“It shapes the flavour, pace, and personality of the dishes, highlighting the smoky depth of our wood-fired oven while bringing simplicity, honesty, and a touch of theatre to every dish.”
The menu features a lineup of share-friendly plates including creamy burrata with chargrilled nectarine, crisp Amatriciana supplì, and delicate crudo di pesce with finger lime. Hero pizzas range from a classic Margherita to the bush honey-infused Diavola and the indulgent Norcia, while handmade pastas pay homage to Chef Girau’s roots with dishes like Nonna Caterina’s Malloreddus.
Larger mains showcase the versatility of the wood-fired oven, offering everything from a one-kilogram fiorentina steak to crispy porchetta and a plant-based cauliflower steak with romesco. Desserts round out the experience with limoncello tiramisu, vegan chocolate mousse with hazelnut praline, and lemon myrtle panna cotta.
The drinks list complements the fire-driven menu, featuring bright spritzes, seasonal cocktails, and a curated selection of Italian and Australian wines.
